Bon Appetit for New Recipes

I love to cook and I am always looking for new ideas.  Every time I try a new recipe I will share it with you.  I rarely follow a recipe exactly because I don't always have all the ingredients on hand, so I tend to improvise and create my own dish with what I have.  I also must admit, I have a hard time measuring anything out, so I will do my best to give accurate amounts.

INGREDIENTS

    • 1 pound whole wheat spaghetti
    • 2 Chicken breast, diced into cubes
    • 1 1/2 teaspoons Italian seasoning
    • 3/4 cup Skim milk
    • 2 whole eggs
    • 1/2 cup grated Parmesan
    • 1 teaspoon garlic salt
    • 1 teaspoon black pepper
    • 8 slices of low sodium bacon, cooked until crispy
    • 1 teaspoons red pepper flakes

    DIRECTIONS

      Cook the spaghetti according to the package directions and cook chicken cubes, with Italian seasonings, in saute pan until cooked through.

      Meanwhile, in a large bowl, whisk together the soy milk, eggs and yolks, Parmesan cheese, the garlic salt, and pepper.

      When the pasta is done, drain it and quickly put it directly into the bowl with the egg mixture. Toss to coat. The hot pasta will cook the eggs.

      When the pasta is coated with the egg mixture, bacon, red pepper flakes. Serve immediately.
